Packed with yellow and orange habaneros, fresh grated ginger, grapefruit and orange. Very fragrant with a flower and lemon nose, but don't let that fool you -- this is HOT stuff. Add a teaspoon to 2 cups of orange juice for an excellent chicken, pork and seafood marinade.
Type of heat: Intense, fiery heat. Use sparingly.

Premium chipoltes (smoked jalapenos) are combined with roasted red peppers in a base of cider vinegar and tupelo honey for a very flexible, all-purpose sauce. The chipoltes give this sauce a nice well-rounded heat with a mellow smoke/chocolate taste, and the roasted red peppers and honey balance the fire quite nicely. Great for stews & chili and basting roasted meats.

A splendid concoction of red habaneros, sweet red peppers, videlia onions, garlic, lime, roasted cumin and fresh coriander. It's fantastic for chilies, salsas and barbecue sauces, and is a great marinade for inexpensive cuts of pork and beef for fajitas.
Type of heat: Solid, slow burn.
Availability: Late summer, early fall, depending on availability of quality red habaneros (they are by nature very delicate, and available in small quantities)
Thai bird chilies, szchechuan peppercorns, 5-spice powder, fresh coriander and lemongrass, in a base of choice rice wine vinegar, and sweet soy make for one awesome sauce. It makes a great addition to dipping sauces and gives added heat to stir-frys. It's a fiesty alternative to the old chili oil.
Type of heat: Firey, but with a hint of sweetness

Feisty and flexible. Hot but not too hot with the pleasing twang of lime and the piquant but smooth taste of cliantro. Compliments seafood, fish, pork and chicken. Combine with canola oil, walnuts, chihuahua cheese and more fresh cilantro in your food processor for a hot southwestern pesto that'll rock your world.
Type of heat: Not as hot as the Bessemer 9, but does have a longer-lasting burn although not as intense. Easy to overdo, so watch it!
